I extend my sincere sympathy to all of Joe's family. During six of Joe's ten years as chair of the Food Science Department, I was chair of Dairy Science. I had great respect for Joe and admired him as a person. Indeed, as written in his obituary, Joe was an individual of outstanding character, integrity and kindness. His journey through life was remarkable and he left a mark on everything he was involved with with. I wish I had known him more closely.

Hi Carol, You and Joe have always been so friendly and kind to me. I am sorry that he is gone and I wish you well. I remember feeding Gregory mashed bananas in your kitchen, in a high chair. Much love, Karen Fennema

In large part, I thank Joe for setting up my career at UW-Madison. In my first week, he put his arm around my shoulder and said, kid, you're going to learn something about candy. He then introduced me around to the industry and handed over Candy School to me when he retired. Thanks, Joe, it's been great. I have always been grateful that Joe took a chance and let me enter into his program on natural food colors in 1984. What a ride! And Lynn and I will never forgot the wonderful hospitality that Joe and Carol extended to us and other grad students during all those evening dinners in their beautiful home. As all us western Canadian UW hockey players will attest, Joe was a very wise man marrying a women from Sakatchewan. Canadian Thanksgiving at the vonElbes house was such a good time that made us all feel a little less homesick. Candy was always a bonus. Condolences Ian Perrin
